Made by the saignée method (an early pressing of juice from the grapes used for the Minervois red wine) with a delightful pale salmon pink colour. The nose exhibits bags of strawberry and raspberry aromas, with a hint of peach. The palate is very fruity but bone dry, with flavours of summer fruits, citrus and a hint of peppery spice, with refreshing acidity and a very decent, peppery finish.
