This is made predominantly from ancient, gnarly, north-facing Carignan vines grown on schist soils surrounding the Cébène winery, situated on a hill over 300 metres above sea level. Whole bunch fermentation and a complete lack of oak influence is the order of the day here. At the time of tasting (October 2021) it is a little closed to begin with, but on day 2 it opens-up beautifully, displaying aromas of soused bramble and cassis fruit, blackcurrant leaf, mint, cherry brandy and a hint of clotted cream. The palate offers all of the above and more, with masses of crunchy, sweet-sour black fruit and spice flavours, a touch of saline minerality, grippy but ripe lapsang tea-like tannins and plenty of cherry kernel acidity. The finish is long and quite firm, but still deliciously sweet and sour - a wine that keeps you coming back for more. Although it is eminently drinkable now (with plenty of air) it will continue to develop and improve for a good few years yet. |
