This is made predominantly from ancient, gnarly, north-facing Carignan vines grown on schist soils surrounding the Cébène winery, situated on a hill over 300 metres above sea level. Whole bunch fermentation and a complete lack of oak influence is the order of the day here. At the time of tasting (July 2023) this is already beginning to drink nicely, but opens-up even more on day 2, offering aromas of soused bramble and raspberry fruit, blackcurrant leaf, mint, kirsch and damp earth. The palate offers crunchy, sweet-sour red and black fruit and spice flavours, ripe lapsang tea-like tannins and plenty of cherry kernel acidity. The finish is long and quite firm, but still deliciously sweet and sour - a wine that keeps you coming back for more. Although it is eminently drinkable now (with plenty of air) it will continue to develop and improve for a good few years yet.
