Drink 2018-2028
Aged for 1 year in wood, after an extended 3 month maceration. Everything is turned up a notch or two in comparison to Le Rouge, and there is a lick of very classy oak, but once again the overall balance is impeccable, with an abundance of ripe tannins nicely offset by more than ample acidity and so much fruit, one wonders just how they managed to cram it all into a 75cl bottle! It really is packed with beautifully ripe black cherry and bramble fruit aromas and flavours, with plenty of peppery spice, garrigue herb, damp earth and tobacco nuances and even a hint of cool peppermint. On the palate, it is more at the herby/saline (rather than meaty) end of the savoury spectrum, again with masses of black fruit flavours, a hint of kirsch and a long, grippy, sweet-sour finish. Whilst certainly approachable with food, this will take a year or two to reach its drinking window (I would suggest from 2020 onwards) by which time the tannins and oak will have had a chance to integrate. Indeed, it has the structure and class to age nicely to 2030 and beyond. That said, if you can think far enough ahead to open/decant the bottle the day before you intend to drink it, then you will be richly rewarded even now, for it really does blossom with plenty of air. A superb wine, built for the long haul.. Certified organic and biodynamic.
