100% Sauvignon Blanc, from 4 separate blocks on 4 different soil types, all separately fermented at a relatively high temperature of around 30C separately in 1 year-old oak barrels, with no racking. As with Le Blanc (above) 20% of the grapes are given the "orange” treatment. The nose is rich and expressive, with notes of lime oil, basil, raisin, woodsmoke and a definite whiff of the sea. It possesses a considerably complex and structured palate, with rich lime/citrus and tart apple flavours, countered by a peachy/apricotty richness and a gently oily texture, with excellent acidity, a touch of grape skin tannin and a very long, spicy finish. Tight, minerally and focused, this is brilliantly quirky, and quite unlike almost any other Sauvignon Blanc you are ever likely to encounter. A real thinking man's/woman's white wine, which gets even better after several days in the fridge. Certified organic and biodynamic.
